Cranberry-Tarragon Chicken Salad
INGREDIENTS
2 cups chopped, cooked chicken meat
1/4 cup dried cranberries, finely chopped
1 stalk celery, finely chopped
1 teaspoon lemon juice
1/4 cup mayonnaise
1-2 teaspoons dried tarragon (or 1-2 Tbsp fresh chopped tarragon)
Salt and pepper to taste
Mix all ingredients together in large 2 quart bowl and chill
Serve on King's Hawaiian Snacker Rolls

Lively Croutons!
Add some pizzazz to your salad by making these tasty croutons in a snap!
1 pckg King's Hawaiian Snacker Rolls
2 tsp butter (melted)
1/4 tsp garlic salt
add garlic salt to melted butter and brush over Snacker Rolls that have been opened up, making 4 slices of flatbread.
Slice into crouton cubes and place onto flat cookie sheet. Pop into 400 degree oven for 5-8 mins (keep an eye on them because they brown quickly)
Sprinkle over salad or into your favorite soup. Enjoy!

Rum Pineapple Upside Down Cake
Baking this cake in a cast iron skillet is key!
1/4 cup (half stick) butter
3/4 cup packed light brown sugar
1 (20 oz) can pineapple slices (drain/reserve juice
2 TBlsp rum (can be dark or light)
Maraschino cherries
1 pkg Duncan Hines Moist Deluxe Pineapple Supreme Cake Mix
Preheat oven to 350 ºF.
Place butter in cast iron skillet on stovetop to melt. Add brown sugar. Stir to incorporate then remove from heat. Arrange pineapple slices and maraschino cherries on sugar mixture.
Prepare cake mix as directed on package, however, instead of water-substitute 1 Cup of Pineapple liquid, 2 TBlsp Rum, and enough water so it all measures 1 1/3 cup.
Add to cake mix and blend well
Pour batter evenly over fruit
Bake 50 minutes or until toothpick in center comes out clean. Let stand 5 minutes. Invert onto large serving plate or cookie sheet.
Chicken & Bacon Spring Salad
2 Boneless, Skinless Chicken Breasts(Thawed, Washed and Dried)
7 Slices Pepper Bacon
1 Head Romaine Lettuce/Garden Lettuce
1 Medium Onion (Diced)
1 tsp dried Tarragon
1 tbsp Garlic Salt
1 tbsp Lemon Pepper
Juice of 1 Lemon
3 Tbsp Worcestershire Sauce
1/3 Cup Oil
2 Tbsp Butter
Parmesan Cheese
Ranch Dressing
Garlic Bread Sticks (Recipe Follows)
Place Bacon Strips on wire rack suspended over a cake pan (place strips so that drippings will land in pan. Place in 400 Degree oven for about 15 minutes depending on oven.
While Bacon is Baking:
In Heavy Frying Pan, melt butter with oil on low-medium heat. Add diced Onion,
Garlic Salt, Tarragon, and Worcestershire Sauce. Saute on medium heat until onions are tender. Add Chicken Breasts. Cook until brown and done throughout. Chicken should be brown and crisp on the outside. (Pierce middle of breast with knife to make sure chicken is cooked all the way through) Allow Chicken to cool.
Remove Bacon from oven and allow to cool. Cut into bite size pieces
Cut Cooked Chicken into bite sized chunks. Add Chicken and Bacon into bowl of cut up lettuce. Sprinkle with Parmesan Cheese. Serve with Ranch Dressing.
Garlic Bread Sticks
1 pkg King's Hawaiian Snacker Rolls
3 TBLsp Butter
Garlic Salt
Melt butter and brush onto open faced rolls (crust side down)
Sprinkle with garlic salt
Cut into sticks
Place onto cookie sheet and into 400 Degree Oven until edges are golden brown
Serve with Chicken & Bacon Spring Salad
